This Cheese is a substitute for the Vasterbotten Ost. The Vasterbotten Ost is a Swedish cheese that is produced with sodium nitrite. The USA is no longer allowed to import dairy with sodium Nitrite, but our importing company has found a Swedish farmer that produces this type of cheese without the preservative: the Scandic Priest XO Cheese.
