English Bacon is a combination of traditional bacon (belly) plus Canadian Bacon (loin). Our English Bacon starts off by being dry cured for 1 week which ensures they are fully cured. From there, they are then soaked for 2 days to remove a majority of the salt utilized in the curing process, and then hung and smoked and fully cooked! Paulina's bacon is one of our products that may take a little longer to make, but hopefully this is demonstrated in the way it tastes!
